| 2 x ca. 450 g | Fresh spinach; cooked, drained and chopped |
| 2 Esslöffel | lemon juice |
| 1/2 Tasse | Onion chopped |
| 2 | Cloves garlic; minced and saut, ed with onion in a small amount of olive oil |
| 1/2 Tasse | Grated Parmesan or cheddar cheese |

Prep: 10 min, Cook: 15 min. Preheat oven to 350°F. Season the spinach with the lemon juice. Combine with saut, ed onion and garlic, and transfer to oiled individual ramekins. Sprinkle cheese over the spinach mixture and, using the back of a spoon, make a 1 inch deep well in each. Crack and drop one raw egg into each well and bake until the eggs are set, about 8 minutes.
