Preheat oven to 325 °C F. Trim fat and connective tissue from steaks. Score on both sides to tenderize and sprinkle with salt and pepper. Pan fry onions in butter until almost tender. Stir in mushrooms and cook 3-4 minutes longer.
Add the next 5 ingredients; stir and cook until sausage loses most of its pinkness. Drain and spread over one steak, cover with the second. Tie to form a cylinder with the stuffing in the center. Brown steak on top of stove in a roasting pan in the shortening. Dissolve beef bouillon in water and pour over steak. Cook uncovered in oven until tender, 2 - 2 1/2 hours.
